Here at Delish, we take every opportunity to base a meal on one of our favorite ingredients: noodles. Ramen noodles, spaghetti, udon noodles, soba, it makes our heads spin! The possibilities are truly endless. Rice noodles top the noodle list and are a constant favorite: With just the right chewy flavor, they hold the sauce incredibly well, and (bonus!) they’re naturally gluten-free.
Whether you’re making curries, stir-fries or soups, rice noodles are a great savory addition to any meal. Your first stop? Try a traditional drunken noodles with shrimp before crossing the pond with our fusion Thai drunken carbonara noodles. Cooking rice noodles can however, be confusing; each package seems to have different instructions. Some ask for it to be boiled and others to soak the noodles in hot or room temperature water. Check the instructions on the packaging beforehand. Whichever route you take, you can rinse the cooked noodles under cold water to remove excess starch, and slather them in a little neutral cooking oil if you don’t plan on using them right away. If the noodles clump, rinse under cold water and drain just before using; they should fall apart easily.
Whether you choose a Thai fried noodle or a Vietnamese feast, try some favorites with your meal. Thai iced tea and sticky mango rice are the perfect ending to a Thai-inspired meal, and you may never drink regular iced coffee again if you try a Vietnamese iced coffee. Sub in sweetened condensed milk, and you’ll be transported.
