Cooking time: 10 minutes

Total time: 20 minutes

Servings: 4

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 green onions, chopped
  • 4 cloves garlic, finely chopped
  • 1 1/2 pounds boneless chicken breasts or boneless chicken thighs, cut into bite-sized pieces (I used thighs)
  • 1 tablespoon soy sauce (I used low sodium soy sauce)
  • 1/4 teaspoon sesame oil
  • 1 tablespoon lemon zest
  • 2-3 tablespoons lemon juice (start with 2 and add more if needed)
  • chopped green onions, for garnish

This is how you make it:

  1. Heat the oil in a skillet. Add the onion and green onion and cook until soft, about 4 minutes. Add the garlic and cook for 30 seconds.

  2. Add the chicken to the pan and cook until browned and almost cooked through, about 3 to 4 minutes. Add the soy sauce, sesame oil. Season with salt and pepper. Cook until chicken is cooked through, about 2 minutes more.
