I need to get better at meal prep because it’s so worth it! One thing that has helped me in the past is pre-marinating chicken. That way we have something ready to go whether I’m cooking or my husband is grilling. I prefer to freeze so I know nothing will expire in the fridge if our plans change.

We love these three easy chicken marinade recipes! The chicken soaks up so much flavor with these three easy marinade recipes. Then all you have to do is let it thaw the night before. Easy and tasty too!

Coriander Lime Marinade

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 1/2 tablespoons honey
  • 1/2 cup coriander leaves, chopped and loosely packed
  • 2 cloves garlic, finely chopped
  • 1/4 teaspoon salt

chipotle marinade

Lemon Garlic Marinade

  • 1 pound boneless chicken breasts
  • 1/3 cup olive oil
  • 1/3 cup fresh lemon juice (2 to 3 lemons)
  • 1 1/2 tablespoons soy sauce (I use low sodium soy sauce)
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

This is how you make it:

  1. To make the marinades, combine all the ingredients in a sturdy plastic wrap food storage bag or reusable freezer bag. Close the bag and then use your hands to mix everything together (smoosh). Add the chicken to the bag and coat with the marinade.
  2. After mixing the marinade ingredients with the chicken, squeeze as much air out of the bag as possible. Pro tip: Label the bag with the marinade name and date. Then immediately put in the freezer. Freeze for up to 3 months.
  3. When ready to use, thaw it overnight in the refrigerator or by submerging the bag in a bowl of cold water for a few hours. Cook as desired.
