After a long, hot summer of cold potato and pasta salads, fresh blueberry, peach and pineapple desserts, and everything grilled, we look forward to hearty, cold-weather fare. Sure, fall has some great main dishes (turkey, stews, ham…), but really, the side dishes are TRUE. TO BE. BEE. Check out our list of 40 fall side dishes for ideas — we all feel warm and cozy just thinking about them.
Like every season, we look to the abundance of fresh produce to inform our recipes, and fall has some of the BEST. Late season eggplant, all that good pumpkin (sorry zucchini!), root vegetables like sweet potatoes and beets, Brussels sprouts… the list goes on. We’ve got everything from standard dishes like mashed potatoes and cheesy bacon butternut squash, to unexpected highlights you’ll love, like Sichuan-style “fishy-scented” eggplant (no fish, just lots of flavor!) and roasted garlic-parsnip puree. If you’re like us, you’ve been avoiding your oven all summer – fall is the time to get back into it! Just about every fall vegetable benefits from roasting, and we’ve got recipes for them all, from roasted turnips to kabocha squash. Fire that baby back on and remember how crunchy and caramelized it can turn even the most blah of veggies.
And let’s not forget soup! To be And last but not least Soup season is back (we love summer gaspachos, but they just don’t quite hit the same comfort food spot), and we’re benefiting right away. Try our pumpkin soup, broccoli cheddar soup, or carrot ginger soup to get in the mood, and check out ALL our favorite fall soups.
We can’t forget our absolute FAVORITE seasonal food holiday: Thanksgiving! We’ve included some of our favorite turkey side dishes here, such as cornbread dressing, casserole with green beans, and roasted vegetables for the holiday season. Since we test recipes much earlier than the actual holidays, we can enjoy a ton of versions of these recipes. So you can trust us when we say, if you love Thanksgiving sides, no one can stop you from making them all season long.
