​5-Ingredient One-Pan Mongolian Beef Recipe With Cauliflower Rice

Rich, flavorful recipes don’t always have a ton of ingredients and take all day to make. This easy, healthy Mongolian beef cauliflower rice recipe has just five ingredients and cooks in one pot. Perfect!

This beef stir-fry is a complete meal, but you can also add a salad or other fresh vegetable. It’s a quick, delicious lunch or dinner!

  • 1 pound beef steak, cut into strips
  • 5 tablespoons low sodium soy sauce
  • 1 Splenda package
  • 1/2 cup water
  • 1 1/2 cups broccoli florets (optional)
  • 2 cups fresh, cooked, shredded cauliflower

This is how you make it:

  1. Toss the steak with soy sauce and let it sit for 15 minutes.
  2. squirt a skillet of olive oil cooking spray on medium heat. Stir-fry the meat for about 5 minutes or until browned. Remove to a plate.
  3. Add the broccoli, water and Splenda. Cover and cook for about 5 minutes or until broccoli just begins to soften, stirring occasionally.
  4. Return the meat to the pan. Stir to combine. Serve over cooked cauliflower.
