Whether you slurp, spit or swirl your pasta, the love for this simple carbohydrate is universal. But the question is: is pasta vegan? Is pasta vegan?

Pasta can definitely be vegan – it depends on where you get it from. The most common form of pasta is the dried store-bought variety. The cardboard boxes of spaghetti, penne, fettuccine, angel hair, farfalle, macaroni and more are specially designed for a long shelf life and are made with semolina, water and salt. Fresh pasta requires refrigeration because it’s made with eggs (although vegan versions are possible and equally luscious). In a supermarket, the difference is easy to see – dried is vegan; refrigerated or “fresh” labels probably aren’t, but restaurants can be a little more elusive. A restaurant that uses fresh pasta will often emphasize this on the menu, but if this adjective isn’t mentioned, it’s always a good idea to ask your waiter if the pasta itself contains animal ingredients.

For a category so loved and satisfying, pasta is an incredibly simple food. Dried pasta is just flour, water, and salt, although some brands may fortify their noodles with B vitamins and iron. Fresh vegan pasta is naturally free of eggs – this binder and fat source is usually replaced with a few teaspoons of olive oil.

This is how you make vegan pasta

The pasta process is deceptively simple and unexpectedly laborious. To start, mix the flour and salt in a bowl and make a well in the center. Pour the water and olive oil into the well and mix with your fingertips to form a dough, kneading the outer flour into the center of the well. Knead the dough for about 10 minutes until the dough is no longer sticky but moist enough to form a ball. Then let the dough rest for 30 minutes in a bowl, covered, on the counter. Now comes the labor of love. To make individual pasta noodles, roll out the dough — make sure each surface is well coated with semolina — and use a utility knife to cut long strands to make your noodles. Note: they don’t stick together, so you can stack your noodles on top of each other, you don’t need to lay them flat. Once your noodles are cut, immediately add them to a boiling pot of heavily salted water. Cook for three to four minutes, drain and serve with your favorite sauce. The whole process takes about 80 minutes for beginners and just over an hour for the experienced pasta professional.
