Amazing Marinated Roasted Brussels Sprouts Recipe Has Flavor to the Core

If you’re looking for bright, flavorful Brussels sprouts, you must try this easy recipe. The Brussels sprouts are marinated overnight in olive oil, lemon and garlic salt. The lemony marinade penetrates – to the core – into the vegetable before it is roasted to perfection.

The lemon juice is only added to the marinade (I threw in the used lemon halves too), but you can add the zest if you want an even more intense lemon flavor. Serve this easy Brussels sprouts recipe as a side dish with chicken, pork, beef or seafood. I’m going to use the leftovers cold in a salad.

Cuisine: American

  • 1 – 1 1/2 pounds Brussels sprouts, washed, ends trimmed and cut in half or quarters (depending on size)
  • 1 tablespoon olive oil
  • 1 lemon, squeezed

This is how you make it:

  1. Place the Brussels sprouts in a plastic zip-top bag. Add the olive oil, lemon juice, garlic salt (to taste) and black pepper (to taste). If desired, add the used lemon to the bag as well. Toss the Brussels sprouts and put them in the fridge overnight.

  2. When ready to cook, pour the Brussels sprouts into a Casserole or on a baking tray in a single layer.

Remark: You can also use freshly chopped garlic and sea salt in the marinade instead of garlic salt.
