Which okra is best for air frying?
While it may seem like bigger is better, opt for smaller okra pods for air frying. Larger pods can be tough and “woody,” so avoid them if you can.
How can I season okra?
This recipe calls for Creole Seasoning, which is a mixture of salt, paprika, garlic powder, cayenne pepper, and other spices. If you can’t find it, mix 1 teaspoon salt, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, and a pinch of cayenne pepper.

- Add the cornmeal, flour, and Creole seasoning to a resealable plastic bag. Close the bag and shake to combine. Whisk together the eggs and pickle juice in a shallow bowl. Add half of the sliced okra to the egg mixture; soak for 10 minutes.
- Use a slotted spoon to drain the egg mixture and add the okra to the cornmeal mixture. Close the bag and shake to coat the okra.
- Transfer the breaded okra to an air fryer basket that has been sprayed with nonstick cooking spray and spread evenly. Spray the okra all over with cooking spray. Cook at 400° for 12 minutes, flip the okra halfway through and spray with more cooking spray.
- Place the cooked okra on a rimmed baking sheet and keep warm in a 200° oven. Add the remaining okra to the egg mixture. Repeat soaking, breading and air frying.
- For the Spicy Dipping Sauce: Whisk together the mayonnaise, sour cream, pickle juice, and hot sauce in a small bowl. Serve with the hot air fried okra.
