A refreshing, tropical fruit cocktail that’s perfect for a sunny evening outdoors. The popsicle garnish is an ingenious way to use the ends of champagne and lemonade bottles that have lost their fizz.
For the champagne popsicle (optional)
40 ml flat champagne
20 ml flat lemonade
1 pinch of sugar
For the drink
40 ml orange vodka – I love Boiler 1 Orange
25 ml passion fruit puree
15 ml lime juice
15 ml sugar syrup
1 edible flowerto garnish (optional)
If you want to make the popsicle ahead of time, gently mix the flat champagne, flat lemonade and sugar, stirring to make sure the sugar dissolves. Pour into a popsicle or small, thin lollipop mold and freeze for four to six hours, until firm.
To make the cocktail, place all liquid ingredients in a blender with two or three scoops of crushed ice and blend them together. Pour into a wine glass, garnish with an edible flower and optionally the popsicle and serve immediately.
