Aged rum meets Jamaican golden rum, fresh fruit and ginger in this summer refresher, conceived with more than a passing nod to our chef/patron Henry Omereye’s love of the West Indies.
20ml Zacapa 23 rum
20 ml Appleton Kingston golden rum
15 ml fresh lime juice
10 ml standard sugar syrup
30 ml watermelon juicepreferably fresh
1 sprig of mint
1 dried citrus slice
Measure all liquids except the ginger beer into a shaker, add a generous handful of ice and shake vigorously for five to ten seconds. Double strain into a highball glass, top with ginger beer, garnish and serve.
