Creamy Macaroni Salad Recipe

To make her macaroni salad, MacLean uses elbow macaroni, although she says other small, firm pastas could work too. Tiny shells, wheel-shaped pasta, even new shapes — as she tells us, “Anything that really combines with the veggies and holds the sauce will work well.”

The sauce is made from mayonnaise, sour cream, Dijon mustard, honey, celery seed, and vinegar. MacLean prefers apple cider vinegar, but if you don’t care for the taste, she recommends using white wine or champagne vinegar instead. As she says, “They’ll all add the acidity needed to round out this dish.” This salad also contains a large amount of vegetables. Here, MacLean goes with celery, onions, peppers, cherry tomatoes, and pickles, but says, “You can really use any veggies you like in a macaroni salad.” Among the possible substitutes she suggests are cucumbers, zucchini and olives.
