The main ingredient you’ll need for polenta is cornmeal, and if your grocery store offers a choice, Olivieri notes that “coarse ground is best.” You’ll also need butter, salt, pepper, and chicken stock for cooking (you can use vegetable stock to keep it vegetarian), and in this recipe you season your polenta with garlic, shallots, and grated Parmesan cheese. Olivieri also likes to finish hers with a little tomato sauce, although this is completely optional.
