This crispy and spicy chicken parm is a delectable meal, and since Bryant basically put it together from scratch, you’ve got quite the shopping list. Start with four chicken breasts. You will need olive oil, an egg, a small onion, a can of chopped tomatoes and a garlic bulb. Grab some pine nuts (which need to be finely ground), breadcrumbs, a cup of grated Parmesan cheese and a scoop of fresh mozzarella. “My most favorite breadcrumbs are actually made at home with stale bread,” explains Bryant. “I tend to grind stale bread in a food processor and then toast them in the oven for 5 to 10 minutes. If that doesn’t work, though, panko can be great and give great texture.”
As for spices, you’ll need garlic powder, dried oregano, salt, pepper, mixed dried herbs (a mixture of thyme, marjoram, oregano, parsley, sage, and basil), and chili flakes. Finally, you need a little bit of brown sugar, some flour and possibly some fresh basil for the garnish.
