Crispy Baked Chicken Recipe With Creamy Spinach Artichoke Sauce Is a Dinner Grand Slam

If you enjoy the combination of spinach and artichokes (think spinach-artichoke dip), you’ll love this easy baked chicken recipe with creamy spinach-artichoke sauce. With a creamy sauce and crispy skin, it’s definitely a dinner grand slam.

  • 4 – 6 chicken thighs with bone
  • 1 teaspoon Italian spices
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 5 cloves garlic, finely chopped
  • 1/3 cup chicken bouillon
  • 2/3 cup heavy whipping cream
  • 1/4 cup grated Parmesan cheese
  • 1 jar (6 – 7 ounces) marinated artichoke heartsdrained and chopped (you can substitute artichoke hearts full of water)
  • 2-3 cups chopped fresh spinach or 5 ounces frozen spinach, thawed and dry-pressed

This is how you make it:

  1. Season the chicken with the Italian herbs, garlic powder and salt and pepper to taste.
  2. Heat the olive oil in a ovenproof frying pan† Add the chicken, skin side down, and cook for about 3 to 4 minutes or until golden brown. Turn the chicken over and cook for another 3 to 4 minutes. Remove to a plate.
  3. Add the garlic and cook for 30 seconds. Add the chicken stock and cook, stirring all the brown bits on the bottom, about 1 to 2 minutes. Add the whipped cream and Parmesan cheese. Cook, stirring, until the cheese has melted. Stir in the artichoke hearts and spinach. Cook until spinach has wilted, about 2 minutes.
  4. Return the chicken to the pan. Bake in a preheated 350 degrees F oven until chicken is cooked through, about 20 to 25 minutes.

Remark: If you prefer to use a baking dish or casserole, pour the finished sauce over the bottom and top with the chicken. Bake as directed.
