Since fideo is a noodle-based dish, you’ll need some pasta, especially angel hair pasta. “I used traditional angel hair noodles and broke them myself,” explains Shelbert. “You can buy fideo pasta, which is basically pre-cut spaghetti.” Aside from the pasta, you’ll need olive oil, dried oregano, minced garlic, vegetable stock, and a can of diced tomatoes, and if you’d like, some toppings, such as cilantro, lime juice, or cheese.
Shelbert does note that there is room for some additions and swaps of ingredients. “You can use chicken stock and even add bay leaves while cooking,” she notes. She also says you can use fresh, sliced tomatoes instead of canned tomatoes — worth about 2 cups.
