Who isn’t looking for new zucchini recipes this time of year? If you like cucumber salad, we’ve got a recipe for you! This easy zucchini salad recipe has crunchy, raw zucchini and a creamy dill dressing. It’s fantastic!

If you have time, refrigerate the salad for about an hour to allow the flavors to mingle. Take this easy salad recipe to potlucks or serve as a side dish for dinner or lunch.

ingredients


  • 2 large zucchini, diced
  • 1 small onion, finely chopped
  • 1/3 cup chopped fresh dill
  • 1 – 2 garlic cloves, finely chopped
  • 1/3 cup mayonnaise (or more to achieve desired creaminess)
  • 1 teaspoon White wine vinegar
  • 1 teaspoon sugar (optional)


This is how you make it:


  1. Combine the zucchini and onions in a bowl.
  2. In another bowl, whisk together the dill, garlic, mayonnaise, vinegar, and sugar, if using. Season with salt and pepper.
  3. Pour the dressing over the zucchini and toss gently to combine. Refrigerate until ready to serve.
