Chickpea flour provides filling protein and plenty of minerals to make it a truly nutritious alternative. This chickpea omelet from Desiree Nielsen is one of my favorite breakfasts and also turns into a delicious dinner. The ingredients for these Lemon Corn Cookies (Paste di meliga) from Alice Carbone Tench are simple: corn flour, butter, sugar, vanilla and lemon zest.
