When I switched to a plant-based diet, I found dairy substitutes easily, but couldn’t figure out how to make my favorite egg-based dishes. Then a genius thought that chickpea flour — a staple in many South Asian cuisines — would work. Chickpea flour provides filling protein and plenty of minerals to make it a truly nutritious alternative. This chickpea omelet from Desiree Nielsen is one of my favorite breakfasts and also turns into a delicious dinner. Once you get the hang of it, you can stuff this omelet with all your favorite fillings — from spinach and tofu feta cheese to roasted red peppers and onions.
2. Lemon Corn Biscuits (Paste di meliga)

Paste di meliga is a traditional biscuit from Piedmont. Meliga is in fact an ancient cornmeal from the region, called melia or meira in the dialect, from which these cookies get their name. The ingredients for these Lemon Corn Cookies (Paste di meliga) from Alice Carbone Tench are simple: corn flour, butter, sugar, vanilla and lemon zest. This version, slightly softer and without butter, is a bit lighter. The addition of lemon juice makes it spicier and lemony.
