This Mousse au Chocolat from Hannah Sunderani is thick, rich and velvety soft. The recipe uses silken tofu, which is a great ingredient in desserts because it gives it a creamy and luscious texture. The mild taste also allows other ingredients to shine – chocolate in this recipe! This is one of my husband, Mitch’s, all-time favorite desserts and one that convinced him, in those early days of transition, that we could still enjoy our favorite recipes on a plant-based diet.

This super spicy Madras consists of meaty tofu “steaks” simmered in a spicy tomato and onion broth. This Tofu Madras from Henry Firth and Ian Theasby packs a punch, with one with two teaspoons of chilli powder, which we love, but keep some plant-based yogurt on hand to sweeten it up if you prefer your curry on the milder side. And don’t forget the classic lemon squeeze to top it off – squeeze the juice and put the lemon on top! Excerpt from BOSH! on a Budget by Henry Firth and Ian Theasby.
