This Mousse au Chocolat from Hannah Sunderani is thick, rich and velvety soft. The recipe uses silken tofu, which is a great ingredient in desserts because it gives it a creamy and luscious texture. The mild taste also allows other ingredients to shine – chocolate in this recipe! This is one of my husband, Mitch’s, all-time favorite desserts and one that convinced him, in those early days of transition, that we could still enjoy our favorite recipes on a plant-based diet.
2. Tofu Madras

This super spicy Madras consists of meaty tofu “steaks” simmered in a spicy tomato and onion broth. This Tofu Madras from Henry Firth and Ian Theasby packs a punch, with one with two teaspoons of chilli powder, which we love, but keep some plant-based yogurt on hand to sweeten it up if you prefer your curry on the milder side. 5. Tofu Broccoli Stir Fry

A very simple stir-fry, perfect for busy weeks. All you have to do is cut up some veggies, prepare a simple sauce, and sauté it all together. It’s all ready in less than 35 minutes. In addition, you can replace the suggested vegetables with any vegetables you have on hand. It’s a great way to breathe life into older vegetables at the end of the week. You can also make this Tofu Broccoli Stir Fry from Caroline Doucet on Sundays and enjoy the leftovers all week long!

Don’t let the heat get to you this summer – cool off with this delectable blueberry ice cream. This Blueberry White Chocolate Ice Cream from Lilia Jankowska is a simple coconut-based ice cream filled with a deep aroma of lime balanced by the smooth sweetness and scent of fresh blueberries.
