Sunday has rolled around at terrifying speed and – again – you’re stuck for what the hell to make the kids for dinner.

I’m here to help, with a simple recipe that ticks all the boxes.

My chicken pot pie is easy to make, requires just a few ingredients (and minimal faff), and pleases kids and adults alike.

I first made this for my son, Zac, and he was a huge fan.

It’s such a simple cheat version of making a chicken pie using things you probably already have around the house.

With the recipe below you can make four medium cakes. I had leftover mix, which I then used in a larger pie with added shredded chicken, onions and mushrooms, which was even better.

How do I make my easy chicken pot pie

  • 1 sheet of puff pastry
  • 1 can of creamy chicken soup
  • 1 cup grated cheddar
  • 1 cup mixed frozen vegetables
  • 1 egg (egg wash)


  1. Start by mixing your soup, vegetables and cheese in a bowl and set aside.
  2. Take your puff pastry and cut out circles so that there is an even number (a lid and a bottom for each pie). With the leftover dough I made flowers for decoration.
  3. Place the rounds in a well-greased cupcake/muffin tin and press down so that no air bubbles form. Take a fork and make holes.
  4. Fill with cake mix and place another circle on top as a lid. Seal the edges with a fork and punch holes with a knife to allow hot air to escape. Brush egg wash over pies.
  5. Bake in a hot oven for 20 minutes until cooked through and golden brown.
  6. Let cool slightly and remove from the bowl. Enjoying!
