Moving on, we’ll share a super easy recipe that will please kids and adults alike.

This carrot mac and cheese is quick and easy to make, requiring only three ingredients (plus two optional ingredients, if you feel like spice things up a bit).

It’s a great way to put some veggies into the little ones’ diets without them really noticing, and makes for a super comforting dinner that can also serve as lunch the next day.

Here’s how to make it.

Easy carrot mac and cheese recipe

Ingredients:

  • 1 large carrot, sliced ​​and cooked
  • 1 heaping tablespoon cream cheese
  • 1 cup macaroni (cooked)
  • Cheddar cheese, grated (optional)
  • Organic Carrot & Herb Stix (optional)

Method:

  1. Start cooking your macaroni according to the package instructions. Drain, add a little oil (to prevent it from sticking together) and set aside.
  2. In a blender, add a carrot that has been steamed until soft and a heaping tablespoon of cream cheese. Blitz until you get a creamy orange sauce.
  3. If you’re making the dish without the optional extras, just mix your sauce and pasta together and serve.
  4. If you want a baked pie, mix carrot sauce and macaroni in a heatproof baking dish and smooth. Sprinkle with plenty of cheddar and ground Organix carrot and spice stix. Bake in a preheated oven at 180°C for 15 minutes until golden brown and cooked through. Enjoying!
