As we prepare for barbecue season, make this delicious dirty rice recipe courtesy of Jenea Butler, CEO of lifestyle blog The Peculiar Green Rose.

“I live in Louisiana and rice dressing (very similar to dirty rice) is always made on a barbecue,” Butler told Fox News Digital. “When I posted a recipe of my Instant Pot Rice Dressing online, I got instant feedback from people telling me they couldn’t find the Cajun rice dressing mix in grocery stores in the northern states.”

“So I then created this Instant Pot Dirty Rice recipe using ingredients that can be found locally almost everywhere,” she added, noting that she received many compliments on the dish.

As Butler points out, the recipe is perfect for a side dish and the leftovers reheat well.

“It can also be eaten as a main course instead, as it has ground beef and ground pork sausage in it,” she said.

Ingredients:

1 pound ground beef

1 pound ground pork sausage

3 tbsp. Cajun/Creole Seasoning (or season to taste)

2 cups diced onion, bell pepper, and celery (also called spice mix)

2 tablespoons. Butter

1 tbsp. Chopped Garlic

1.5 cups long grain rice (rinsed)

1 tbsp. Worcestershire sauce

3 cups chicken stock

Green onions (optional)

Directions:

1. Set your Instant Pot to “Saute” mode and brown your ground beef and ground pork sausage. Stir in your Cajun/Creole seasoning while the meat is browning.

2. Once your ground pork sausage and beef are browned, drain most of the fat from your Instant Pot. You only want to leave a few tablespoons of fat on the bottom.

3. Next, add your diced onion, bell pepper, and celery (also called spice blend) to your Instant Pot and cook for about 5 minutes until slightly browned.

4. Add your long grain rice, minced garlic and butter to your Instant Pot. Cook all this together for 3 minutes on the “Saute” mode. You should lightly toast your rice in the butter. The rice may stick to the bottom of the pot and burn, so you’ll need to stir continuously for 3 minutes with a plastic spatula or wooden spoon to scrape the bottom of the pot.

5. Then add the chicken stock and Worcestershire Sauce. Scrape the bottom of the pot to make sure there are bits stuck to the bottom of the pot. (It’s important that you do this so you don’t get a “burn” message when cooking under high pressure.)

6. Close the lid and turn the steam valve to the “seal” position.

7. Press the “Pressure Cooking” button. Then press the “Pressure Level” button until you select “High Pressure”.

8. Turn on the timer for 3 minutes. Once the pressure has fully built up, the timer will begin to count down.

9. After the timer is up, let your Instant Pot release the pressure naturally for 10 minutes. (This means don’t touch anything. Just let it sit for 10 minutes.) Then quickly release any remaining pressure. **Warning – The steam is very hot, use a towel or long spoon to turn the outlet valve so as not to burn yourself.

10. Sprinkle your diced green onions on top and your Instant Pot Dirty Rice is ready to serve.
