- Pat the skin of your chicken dry and make holes around the chicken with a knife.
- Combine all remaining ingredients in a blender and blend for three minutes. Pour half of the jerk marinade over the chicken and massage it in. Place in the fridge overnight.
- When you’re ready to cook, bring the grill temperature to 165ºC. Place the chicken skin side down and close the grill lid for 5-7 minutes until it begins to brown. Flip and cook for the remaining 5-7 minutes. Repeat two more times until the chicken is dark brown and cooked through.
- Move the chicken to the sides of the grill and brush the remaining Jerk sauce over it. Close the lid and cook for another 5-7 minutes.
- Remove from the grill and let the chicken cool for about 10 minutes. Eat with the bone or chop the meat into smaller pieces and serve.
Do you want to cook in the oven? Bake for 45 minutes on a baking tray at 200ºC (180ºC hot air).
