If there’s one thing we always pick up at the grocery store, it’s a family back of boneless boneless chicken breast. It might get a lot of nonsense from the chef, but in the end it’s versatile, everyone in the family likes it, and it’s quite nutritious too. But that also means we’re always scouring the internet for weeknight chicken recipes, especially those that don’t leave us with a pile of dishes at the end. The recipe calls for pretty basic ingredients and nothing too expensive. You’ll need your boneless chicken breasts pounded to be 1/2 inch thick – you can do this by sandwiching them between plastic wrap and pounding them with a meat mallet, rolling pin, or even a wine bottle (be careful though!) until they’re soft. have the correct thickness. If you pound the chicken, it will cook quickly and evenly as it roasts on your rimmed baking sheet, but you can also pay a little extra at the store for chicken cutlets if you want to skip this step.

You cut some peppers and onions, and season them with chili powder and salt. Place them under the grill and after a few minutes add the chicken. While the chicken and veggies are cooking, heat up your flour tortillas as well. Wrap them in foil and they will warm right up on the oven rack.
