  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1/2 cup boiling water
  • 3 large egg whites
  • 6 tablespoons sugar
  • 1 teaspoon vanilla
  • pinch of salt


This is how you make it:

  1. Whisk the cornflour and cold water in a pan† Add the boiling water and cook, stirring, until clear and thickened. Remove from heat and let cool completely.
  2. Beat the egg whites with a electric mixer† Gradually add the sugar and beat until stiff. Add the salt and vanilla.
  3. Slowly begin to whisk in the cooled cornstarch mixture. Knock well.

Here’s how to use it:

  • Divide the meringue over your cooled pie filling.
  • Bake at 350 degrees F for about 10 minutes.
