INGREDIENTS

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon cardamom
  • ½ teaspoon cinnamon
  • 4 large eggs
  • 1 cup of milk
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Butter, for cooking
  • Blueberries, to serve
  • Sweetheart, to serve

filling

  • 1 cup ricotta cheese or farmer’s cheese
  • ½ cup mascarpone cheese
  • 1 large egg yolk
  • ½ teaspoon cardamom
  • 1 teaspoon vanilla extract
  • 1/3 cup pistachios, chopped, plus more to serve
  • 2 tbsp sugar

PREPARATION

  1. In a bowl or blender, combine the flour, sugar, cardamom, cinnamon, eggs, milk, vanilla, and salt until smooth. Let stand for 20-30 minutes or refrigerate overnight, covered.
  2. Carefully grease a 9-inch non-stick skillet with butter over medium heat.
  3. Pour ¼ cup of the batter into the center of the pan and rotate the pan to coat evenly.
  4. Cook for 2-3 minutes, or until the top is completely dry. Turn over and cook for another 1-2 minutes. Set aside and repeat with remaining batter.
  5. Meanwhile make the filling: combine the ricotta cheese, mascarpone cheese, egg yolk, cardamom, vanilla, pistachios and sugar until smooth.
  6. Place a crepe on a work surface, place 2 tablespoons of the filling in the bottom third of the crepe. Fold the bottom over the top of the cheese filling. Fold the sides to the center. Roll like you’re rolling a burrito, pushing the edges in.
  7. Heat the butter in a frying pan over medium heat. Carefully place the blintzes, seam side down, in the pan, cook for 2-3 minutes, or until golden brown and crispy, flip and cook for a further 1-2 minutes.
  8. Remove from fire.
  9. Serve with additional pistachios, berries, and optional honey.
  10. Enjoying!
