Puerto Rican Yellow Rice (Arroz Amarillo)

Puerto Rican yellow rice (Arroz Amarillo) is another Latin food. It is one of the three trinity rice side dishes eaten with almost every meal. Puerto Rican yellow rice is a bland side dish, like white rice (arroz blanco) that goes with any meal. It is also so flavorful and delicious. You can literally eat this rice on its own because it is so delicious! Below are eight easy steps to make this perfect traditional Latin rice.


Recipe: Puerto Rican Yellow Rice (Arroz Amarillo)

TOTAL TIME: 35 MIN – PORTIONS: 2 – 4 – DIFFICULTY: SIMPLE/MEDIUM

Ingredients:




  • 3 tablespoons corn oil
  • ½ red pepper
  • ½ green pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon ground black pepper
  • 2 packs of Sazon Con Culantro Y Achiote
  • 2 cups water, plus 2 tablespoons
  • 1 cup extra long grain rice

Preparation:


  1. Place an 8″ pan over medium heat. Add the oil. Heat the pan for about 30 seconds.
  2. Add the green chillies and red chillies. Then add the salt, garlic powder, oregano, ground black pepper and Sazon Con Culantro Y Achiote. Cook for about three minutes, stirring frequently.
  3. Add the 2 cups of water and stir.
  4. Turn the heat to medium heat and cook for about four minutes.
  5. When the water is boiling, add the rice and stir.
  6. Cook for about ten minutes, uncovered, until all the liquid has been absorbed by the rice. Turn the rice only twice during this cooking period. * We don’t want to disturb the rice too much during this recording period, otherwise the rice will be mushy.
  7. Turn the heat down to medium heat, stir the rice well, add the two tablespoons of water to the rice and cover the pan with a tight-fitting lid.
  8. Cook for 10 minutes or until rice is cooked to your liking.
