Queijadas de Sintra Recipe: Let's Make This Traditional Portuguese Cheesecake Recipe

Queijadas de Sintra, or Portuguese cheesecakes, are a traditional pastry found throughout Portugal. The cheesecakes have a flaky crust and a rich, cheesy filling with a hint of sweetness.

All kinds of cheeses are used in these pastries – from mozzarella to goat cheese to ricotta. This Portuguese cheesecake recipe uses fresh (fresh is key here!) mozzarella and is not at all difficult to make.

  • 2 cups all purpose flowersieved
  • pinch of salt
  • 2 tablespoons vegetable shortening
  • 1/2 – 2/3 cup ice cold water


This is how you make it:

  1. To make the dough, place the flour and salt in a mixing bowl. With help from a pastry chef or your fingers, cut in the shortening until you get the texture of cornmeal. Slowly add the ice water while stirring until a dough forms. Form the dough into a ball, wrap in plastic wrap and refrigerate for at least 2 hours.
  2. For the filling, put the cheese, butter, sugar and cinnamon in a food processor or kitchen mixer. Beat on high until smooth and creamy, about 1 minute. Scrape down the sides and beat for 1 minute more. Add the egg yolks and beat well. Add the flour and start pulsing the food processor to just blend. Place the filling in a mixing bowl and refrigerate for at least 2 hours.
  3. When you are ready to bake the cheesecakes, divide the dough in half. Roll out both halves as thinly as possible on a lightly floured surface. Use a 3-inch cookie cutter to cut out circles. Re-roll the scrapes and cut out as many circles as you can.
  4. Bet every round in a muffin thin cup. Fill each cup with the filling. Bake in a preheated 400 degree F oven for about 18 to 20 minutes or until the filling begins to set and is golden brown. Remove and let cool to room temperature before serving.
