Scottish Ale, such as Wyeast WY1728 Scottish Ale or White Labs WLP028 Edinburgh/Scottish Ale

TRAVEL DIRECTIONS
Grind the grains. If your mash isn’t big enough for this malt bill, just pack everything you can. Mash at 64°C (148°F) for 1 hour and drain into the kettle. Do not bubble or top up. Cook until you’re close to target gravity, then add hops as per the schedule. After boiling, perform a whirlpool step: Stir or recirculate the wort for 5 minutes, add whirlpool hops and let steep for 20 minutes. Cool to about 20°C, aerate thoroughly and apply to a large healthy yeast starter. Fermentation at about 72°F (22°C). When the fermentation stops, add another strong starter. (Optionally add an exogenous enzyme, such as glucoamylase.) When fermentation is complete and gravity has stabilized, place in a CO2 purged spirits keg and let it mature for months, or try it in a glass carboy with some bourbon-soaked oak cubes.
