  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 yellow bell pepper, sliced
  • 2 teaspoons curry powder
  • 2 pounds boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup sour cream or Greek yogurt
  • 1 cup frozen peas

This is how you make it:

  1. Heat the olive oil in a skillet. Cook the bell pepper and onion until soft, about 5 minutes. Add half of the curry powder and cook, stirring, for 2 minutes. Arrange the vegetables on a plate.
  2. Add the chicken to the pan. Sprinkle with the remaining curry powder. Cook until browned on both sides, about 2 minutes per side. Return the onion and bell pepper to the pan along with the peas. Warm through.
  3. Stir in the sour cream. Season with salt and pepper.
