Recipes: Wipe off the Monday blues by treating yourself to Chicken Spring Rolls

The craving for Chinese food automatically increases after a hectic week of reading Monday and if, like us, you crave the same, we’ve got you sorted with a lip-smacking chicken spring roll recipe that you can whip up and treat yourself at home and wipe those Monday blues away. . A Chinese appetizer or snack filled with the choice of our favorite fillings is all the magic missing from our lives and this drooling Chicken Spring Rolls recipe promises just that as it takes just 10 minutes to prepare and serves 2.


1 cup minced chicken

12 spring roll wrappers

2 tbsp oil + for frying

1 tbsp Garlic chopped

1 tbsp chopped ginger

½ cup Cabbage shredded

½ cup carrots, cut into juliennes

1 tsp soy sauce

Salt to taste

1 tsp ground black peppercorns

1-2 spring onion greens, chopped,

½ tsp Rice vinegar or regular vinegar

½ tsp crushed red peppers

Pasta of flour and water to close the sandwiches


Heat oil in a non-stick pan. Add garlic and ginger and fry well. Add cabbage and carrot and stir over high heat. Add minced chicken, soy sauce, salt, ground peppercorns, chillies and mix well. Cook on high heat for 2-3 minutes. Add ¾ of the spring onions, turn off the heat and mix well. Place on a plate and let the mixture cool.

Place the spring roll wrappers on a flat surface. Place a spoonful of the cooked mixture on one side of each sheet and roll with the edges folded over. Apply the prepared paste to the edges and seal tightly. Heat enough oil in a pan. Fry the rolls until golden brown. Drain on absorbent paper. Serve hot.
