Sweet & Tangy 20-Minute Skinny Sloppy Joe Recipe Makes an Amazing Salad

What a delicious skinny sloppy joe recipe! I added two servings of bell peppers and two servings of diced tomatoes (1 cup) to the sloppy joe mix (since this is a two-serving recipe), then I made a small sloppy joe salad with a serving of spring mix lettuce. It was amazing!

This sloppy joe recipe for ground beef or ground turkey is great for meal prep. Packing up meal prep containers and put some fresh lettuce leaves in a separate bag or container.

  • 9 ounces (93% lean) ground beef or turkey
  • 1/4 cup low-fat sharp cheddar cheese


This is how you make it:

  • Brown ground beef in medium skillet on medium heat. Drain fat.
  • Combine sauce ingredients in a small bowl. Pour the sauce over the ground beef. Heat the frying pan over low heat. Stir until combined. Continue cooking for 4 to 5 minutes or until warmed through, stirring often.
  • Divide the mixture in half and top each serving with 2 tablespoons of cheese.
