Ingredients

  • 2 tablespoons of olive oil

  • 14oz andouille sausage, sliced

  • 1 small onion, diced

  • 1 green bell pepper, diced

  • 2 celery stalks, diced

  • 6 cloves garlic, minced

  • 2 tablespoons tomato paste

  • 2 tablespoons Creole seasoning

  • 3 cans red beans, drained

  • 2 cups of chicken broth

  • 2 bay leaves

  • 1.5 cups white rice (uncooked)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the sausage and brown it on both sides. Remove to a plate.
  2. Add the onion, celery and bell pepper. Sauté until soft.
  3. Add the tomato puree, garlic and creole seasoning. Cook for 3-4 minutes.
  4. Return the sausage to the pan along with the drained beans, chicken stock and bay leaves. Bring to a boil and cook for 30 minutes.
  5. While the beans are simmering, cook the rice according to package directions.
  6. Serve immediately.
