This is how you make asparagus pie – recipe | Food

My favorite way to eat asparagus is steamed and soaked in melted butter, and with such a short season it’s hard to get enough of that simple pleasure… but sometimes the occasion calls for a little more effort. But not much; Tapping into the grassy spears’ affinity with rich, creamy flavors, this cake looks impressive but is actually more of an montage.

Serves 4-6

For the dough (or use 250 g ready-made shortcrust pastry)
225 g flourplus extra to dust
120 g cold butter
plus extra for greasing
1 egg yolk

For the filling
300 g asparagus
284 ml whipped cream
2 eggs
50g Gruyere or Nutty Cheddaror vegetarian alternative, finely grated
Nutmeggrate (optional)

1 Start with the dough

You could use store bought shortcrust pastry, but it’s getting harder and harder to find one that’s made with butter, and the others usually contain both palm oil and not half as tasty, so I highly recommend trying homemade ; it really isn’t as hard as they do on Bake Off.

2 Make the dough

Place the flour and a generous pinch of salt in a large bowl and grate or cut in the butter (or blend in the small bowl of a food processor).

With your fingertips, or the pulse function, rub the butter into the flour until you no longer see any large pieces.

3 Knead to the right consistency

Stir in the egg yolk to bring the mix together into a dough; if it is too crumbly to form a ball, add a little cold water; if it’s too sticky, add a little more flour.

Too much water will cause the dough to shrink in the oven, while too much will make it difficult to roll – aim for the smooth texture of plasticine.

4 Let the dough rest and prepare the mold

Crush the ball into a thick disk, wrap and refrigerate for 20 minutes. If you want to go ahead you can let it sit for a few days now, but as with ready-made pastries, take it out of the fridge before using it to soften a bit.

Meanwhile, grease a round cake tin with a diameter of 22 cm.

5 Line the tin

Preheat oven to 200C (180C Fan)/390F/Gas 6. Roll out the dough on a lightly floured surface until large enough to line the tin, then lift gently into the tin and press the dough into the mold. sides.

…lined with baking paper and fill with baking beans, raw beans or rice.

6 Blind bake the bottom, then prepare the asparagus

Bake for 15 minutes, until lightly golden, then carefully lift out the paper and beans – they will be hot. Return the pie crust to the oven for five minutes.

Meanwhile, cut the woody bits off the asparagus and steam the spears for about four minutes, or until al dente (how long this takes will depend on their thickness, but keep in mind they will continue cooking in the oven, so wander on the side of caution).

7 Make the puree

Cut the asparagus into short pieces and set the top aside for later. Place about half of the rest of the asparagus pieces in a food processor and grind to a puree.

8 Make the filling

Pour the cream into a pitcher and beat in the eggs.

When the two are well combined, mix in the asparagus puree and grated cheese (almost any hard cheese will do here; Parmesan or similar would be nice too) and season well with salt and a little grated nutmeg, if using.

9 Fill the bucket and bucket

Place the remaining asparagus pieces, including the top, on the bottom of the dough and pour in the egg mixture.

Bake for about 35-40 minutes, until cooked through and golden brown, but still a little wobbly in the center. Let cool slightly or completely before serving – if you make this ahead of time, keep covered, but at room temperature to prevent the dough from becoming soggy.
