WEEKLY RECIPE with Bette Banjack — 3 Ingredient Cookies – The Mercury

Everyone seems to have a lucky number – mine is a 3.

With most things I like to interact and check if a 3 is included. So today I’m sharing 3 recipes that all contain only 3 ingredients. Better yet, you probably have all the ingredients in your pantry. One day your “sweet tooth” is working and nothing is around – in 30 minutes you could have made a treat.

For ALL 3 RECIPES — Preheat oven to 350 degrees. They are all baked for 12-13 minutes on a parament-lined baking sheet. Check that they do not burn. When you take it out of the oven, let it cool on the baking sheet for 2 to 3 minutes. Place on a wire rack to cool completely.

All 3 cookies freeze well or store in an airtight container.

PEANUTBUTTER COOKIES

1 egg

1 cup sugar

1 cup peanut butter (store-bought)

Combine all 3 ingredients until smooth. Scoop or roll into 1″ balls – place on a baking sheet. If desired, form criss-cross pattern on top with fork pressing down – repeat in opposite direction. Makes 18 cookies.

BANANA BREAD COOKIES

2 large ripe bananas

1 cup rolled oats

¼ cup chopped walnuts

Mix all 3 ingredients until well blended. Scoop or roll into 1″ balls. Place on paraffin-lined baking sheet. Makes 13 to 15 cookies.

CHOCOLATE COOKIES

1 cup creamy soft peanut butter

1/3 cup maple syrup/golden syrup/or honey

1 cup chocolate chips

Combine 3 ingredients. Cover the bowl and freeze for 1 hour or refrigerate for 2 hours. Make 12 balls of dough.
