Sliced duck in orange sauce
Ingredients:
* Duck – 250 grams
* Butter – 100 gr
* Ginger – 1 tsp
* Diced orange (pitted) – 250 g
* Salt – to taste
* Fresh Orange Juice – 500 ml
* Tomato sauce – 200 ml
* Onion – Sliced
* Red and yellow peppers – ½ of each
* Garlic – 1 tbsp
* Red Chilli Paste – 4 tsp
* Sesame seeds – ½ tbsp
* Sugar – to taste
* Refined oil
Method:
* First roast the duck and steam it well to soften the meat
* Now in a preheated pan pour some refined oil until it warms up a bit
* Add diced onion, red and yellow bell pepper.
* Once the vegetables have shrunk a little, add ginger and garlic paste, salt and sugar, chilli paste, tomato ketchup, fresh orange juice one by one and fry to prepare the orange sauce
* Then add the cooked duck to the pan and stir and cook the duck again until the sauce absorbs well into the meat
* Serve the duck hot and garnish with sliced red chillies

Orange Roasted Lamb
Ingredients:
* Lamb – cut into pieces – 1 kg
* Butter – 100 gr
* Ginger – 1 tsp
* Orange slices (pitted) – 250 gr
* Salt – to taste
* White pepper – half a teaspoon
* Star anise – 5 grams
* Fresh Orange Juice – 500 ml
* Tomato sauce – 200 ml
* Onion – Sliced
* Ginger- 1 tbsp
* Garlic – 1 tbsp
* Celery – 1 tbsp
* Red Chilli Paste – 4 tsp
* Dark soy sauce – 3 tsp
* Refined oil
Method:
* Mix some star anise, ginger and salt in a bowl
* Marinate the pieces of lamb with onion, tomato sauce, ginger, garlic, red chilli paste, dark soy sauce and set aside
* Heat some refined oil in a wok and wait until the oil is slightly warm
* Now add the marinated lamb until the lamb is cooked through and brown in colour
* When it is cooked, remove the meat from the wok and cut the pieces of lamb into the desired slices
* Now heat some butter in another wok
* Add orange slices
* Add salt and white pepper powder
* Now add the fresh orange juice and bring it to a boil or until it has a sauce-like consistency
* Pour the sauce over the sliced lamb and serve!

Schezwan Orange Roast Pork
Ingredients:
* Diced vegetables (1 piece of each red/yellow/green pepper)
* Shitake mushroom
* Sliced Orange (2 Pieces)
* Pork – 1 serving
* Garlic
* Ginger
* Celery
* Champane
* Tomato ketchup (1 tsp)
* Orange squash (1 tablespoon)
* Salty
* Pepper
* Chili paste
* Sugar
* Vinegar (1 ½ tablespoon)
* Schezwan pepper
* Spring onion
* Refined oil/butter
Method:
* Take a preheated wok and blanch all the diced vegetables. When you’re done, keep the vegetables aside
* Now heat refined oil/butter in a wok
* Add some chopped ginger, garlic, celery, fry them with Champan ingredients
* Add some tomato ketchup along with some chilli paste and orange squash
* Stir these ingredients until a thick consistency appears
* Now add salt, pepper, sugar & vinegar to taste
* Add Schezwan pepper for flavor
* Garnish with spring onion!
